Kupu Maui Kale Salad

Kupu Maui is a pop dinner concept that happens once a month at various farms and scenic landscapes on Maui. The brain child of publishing and social media expert, Dania Katz, Kupu is the perfect marriage of building community through food appreciation and awareness.  I had the pleasure of being a participating chef at the May Kupu event and was honored because it was also a fundraiser for PBS Hawaii. The PBS philosophy is about educating, whether its film related, art related, children related, anything to do with doing good for the community is their platform – a philosophy very close to my heart.

Kupu MauiThe event brought together Chefs with similar cooking and charitable philosophies and I loved worked hard alongside of this team.  The event was held at the Kapalua residence of Gunnar and JoRene Vakirs. Kapalua has always been very close to my heart as it was the where my first job on Maui – the Kapalua Bay Hotel.

The most gratifying part of the experience for me though, was getting to know Chef/Co-host James Simpliciano, known to most as Kimo. I was impressed with how hard he works and how together of a man he is. I haven’t seen this type of hard working man in a long time. I feel it doesn’t matter how many hoops you put in front of him, he will get through them. I’m also very impressed with his knowledge and sourcing on the island as a farmer.

It was a pleasure to be part of Kupu Maui and support a great cause like PBS Hawaii.
