Kuku Sabzi

Fresh Herb Soufflé

Herb Kuku is a traditional New Year’s dish of Persia. The green of the herbs symbolizes rebirth, and eggs represent fertility and happiness for the year to come.

Makes 4 servings
Preparation time: 30 minutes
Cooking time: 1 hour

  • 5-6 Eggs
  • 1 tsp. Baking powder
  • 1 tsp. Salt
  • 1/4 tsp. Black pepper fresh ground
  • 2 tsp. Garlic crushed
  • 1C. Garlic chives, chopped
  • 1C. Fresh parsley leaves chopped
  • 1C. Fresh cilantro leaves chopped
  • 1C. Fresh dill chopped
  • 1Tbsp. Flour all purpose
  • 2Tbsp. Barberries dried
  • ½ C. Clarified Butter or oil.

Preheat oven at 350 F. Break eggs into large bowl.

Kuku preperation

Add baking powder, salt, pepper. Beat with fork. Add garlic, chopped herbs, and barberries and flour. Mix thoroughly. Adjust seasoning to your taste.

Kuku Sabzi mixture

Pour ¼ cup of oil or butter into an 8-inch ovenproof baking dish and place it in the oven for 10-15 minutes. Pour in the egg mixture and bake uncovered for 3-0 minutes.

Remove the dish from the oven and gently pour the remaining oil or butter over kuku. Put the dish back in the oven and bake for 20-30 minutes longer, until golden brown.

Let in cool for a while. Unmold by loosening the edge with a knife and inverting it onto a serving platter. Cut the Kuku into small pieces and serve hot or cold with Sangak bread, Mast o Khiar (yogurt cucumber dip).
