Javaher Polo

Javaher Polo (Wedding dish if using sugar)

Makes 6 servings
Preparation time 40 minutes
Cooking time 2 hours

½ C. Clarified butter
1 ea. Onion diced
1 C. Dried Barberries
½ C. Raisins
1 C. Orange Peel slivered Seville
2. Large Carrots
3 C. Balsamic Rice
1/2. tsp. Salt
4 Tbsp. Saffron water
2 Tbsp. Almond slivered
2 Tbsp. Pistachios slivered
2 Tbsp. Yogurt

Preparing the Rice Mixture

Wash the rice under the cold water until water in no longer murky and it is clear. Add salt to the water and let it soak in salt water for 2-3 hours.

Bring 8 cups of water and 2 Tbsp. of rice to boil in a large non-stick pot. Pour the washed and drained rice into the pot. Boil briskly for 6-8 minutes gently stirring to make sue rice are not sticking to the bottom of the pot. Bite a few grains of rice and make sure it is al-dente. Drain rice in a large fine mesh colander. Rinse in cold water to stop the cooking.

Rice Preparation

Clean Barberries by removing their stems and placing berries in colander. Allow berries to soak in cold water for 20 minutes by placing the colander in a large container full of cold water. The sand will settle to the bottom. Drain and set aside.

Preparing the berries for Javaher Polo

Peel 2 large oranges. Place the orange peel on the skin side down, flat and use a knife to remove the white inner skin.

Cut each clean skin with knife or scissors in to a very thin strips.

Place the slivers of orange peel in saucepan of and cover with water. Bring to boil. Drain to remove the bitter taste. Pat dry and set aside.

Javaher Polo

Place the orange peel in the food processor and push the pulse button to chop the oranges in small pieces, to preserve the flavor but to avoid biting in orange peels.

Wash and peel the carrots. Grate the carrots or use the food processor to Julianne the carrots and set aside.

Wash the almonds to remove dust and set aside.

Javaher Polo Almond Preparation

Heat ½ cup olive oil. Dice two onions and sauté slowly on low heat to caramelize the onion.

Add carrots, almond, berries, orange zest and ½ of the saffron water to the sauté onion and continue to cook for 5 minutes before turning the heat off. Mix well. Season with salt and pepper and set aside.

Preparing the bottom of the pot (TAH-DIG)
This crispy rice is very popular and is formed in the bottom of the pot.

Heat oil/ butter-50/50 to avoid burning in the bottom of the pot. In a small bowl, mix 2-3 cups of cooked rice depending the size of your pot with the yogurt. Spread the rice yogurt mixture on the oil surface and cover the bottom of the pot.

Place the rice mixture on top of the yogurt surface and pile into a pyramid shape without pressing the rice. Mix the rest of the melted butter, and ¼ cup of warm water and pour over the pyramid. Cook for 15 minutes on medium heat so pot and rice gets hot throughout.

Lower the heat and cover the lid with cloth or double paper towel. Place the lid on the pot to prevent steam escaping. Cook with low temperature for 45-50 minutes until rice is fully cooked. Fill the sink with 1 inch of cold water. Remove the pot from heat; allow pot to cool in the water without uncovering it for 5 minutes.

To serve, remove 3-3 cups of rice and mix with remaining saffron and set aside. Using a spatula gently transfer the rice onto a large platter. Do not press the rice. The rice need to be fluffy and loose. Using a spoon spread the saffron rice in a layer on top of the rice to cover the mount. Garnish with Pistachio slivers and serve.
